Chef Quy Trinh of Roy's Las Vegas

With donation involvement going toward the James Beard Foundation, this Wine and Food Festival hits close to home for Chef Quy Trinh who will be representing Roy’s Hawaiian Fusion Cuisine and the culinary masterpieces of Roy Yamaguchi, founder and 1993 winner of the James Beard Award.

 

“I love doing fundraisers, it helps with the business and you get the chance to help someone else. Especially with this food and wine festival and since it’s with James Beard, I’m already in the door for that,” said Trinh. “However I can help out the community and bring out good food and spread Roy’s name and let people know we have so many different concepts, I love it.”

Maki, Nigiri or Temaki, regardless of what you order, one thing is for sure, sushi is one popular cuisine in Las Vegas and a necessity for any Vegas-based food event.

“I’m not sure what exactly I will be bringing to the event but I’m definitely thinking sushi. Maybe a roll, some sashimi dishes, I’m still playing with ideas,” said Chef Quy Trinh. “Whatever it is it will be unique Asian cooking, it won’t be like the common sushi roll, it’ll be one of the unique ones that Roy created.”
